Grilled cod fillet in port sauce

Ingredients

Cod fillet1 piece (about 160 g)
Green peas500 g
Green bell pepper1/2
Red bell pepper1/2
Yellow bell pepper1/2
Assorted sandwich sproutsa little
Bottle port(about 190 ml)1/4
Dry red wine (about 375 ml)1/2 bottle
Demi-glace50 m
Butter50 ml
Dried thyme – a little
Saltto taste
Ground white pepperto taste

Method

  • Cook green peas in water until soft. Strain and puree in a blender. Set aside.
  • Season the cod fillet with salt and pepper. Fry over high heat until golden on both sides. Bake in a preheated oven at 200ºC for 6 to 8 minutes.
  • Cook red wine, thyme and demi-glace until it thickens. Add pork and then butter. Stir gently into a thick sauce.
  • Arrange the cod fillet on a serving plate. Cut the bell peppers into pieces and stir fry until done. Arrange bell peppers, mashed peas and sandwich sprouts on the side. Pour the sauce from step 3 over at last. Serve.
